piña coladas
We’re off! The Red Spoon has flown the coop and went to Hawaii and Australia for the next three weeks! Responses will be slow, but new posts will appear, as I take you through some new recipes and some of my cooking backlog. But in the spirit of sunshine, sandy shores and approximately 10.7 tubes of SPF 50, we leave you these.
Piña Coladas
Serves 2
4 ounces coconut cream
8 ounces pineapple juice
4 ounces golden rum, if using
5 or 6 ice cubes
Combine the coconut cream, pineapple juice and rum (omit rum for a virgin colada) in a blender and whirl briefly. Pour into glass and top with umbrella or pineapple wedge.
